Ingredients

  • 250g Protein Plate Plant-Based Chicken Free Strips (available in the chilled plant-based section at Woolworths)

  • 1 Packet Microwave white rice

  • 1 Carrot

  • 1 Red onion

  • Spring onion (amount as desired)

  • 1 cup Vinegar

  • 1 cup Warm water

  • 1 cup Red cabbage 

  • 1 cup Red and yellow capsicum

  • 1 can Black beans 

  • 2 tbsp Sriracha sauce

  • 2 tbsp oil

 Method

  • STEP 1

    Thinly slice red onions and put in a bowl, add warm water and vinegar and put aside to soak for 10 minutes.

  • STEP 2

    Shred the cabbage, grate the carrot and thinly slice the capsicums.

  • STEP 3

    Empty your can of black beans into a cylinder to drain.

  • STEP 4

    In a large fry pan over medium heat add 2 tbsp olive oil and cook the Protein Plate Plant-Based Chicken Free Strips for 3-5 mins until golden.

  • STEP 5

    Microwave the white rice for 90 seconds.

  • STEP 6
    In a bowl, add all your prepared vegetables, beans, pickled onions, chicken, and white rice. Garnish with thinly sliced spring onions. Add sriracha sauce to taste.
