Baked Jacket Potatoes
With Plant-Based Beef

Ingredients

  • 250g Protein Plate Plant Based Beef mince (available in the chilled plant-based section at Woolworths)1 cup Cabbage

  • 3 large potatoes

  • 3 tbsp Dairy Free Sour Cream

  • 1 Brown onion

  • 1 Spring onion thinly sliced

  • 2 tbsp Tomato purée

  • 50g Plant Based Cheese

Serves: 2

 Method

  • STEP 1

    Pre heat oven to 220c

  • STEP 2

    Wash the potatoes, then prick them all over with a fork

  • STEP 3

    Bake in a pre-heated oven for 1½ hours or until the inside is tender

  • STEP 4

    Finely chop brown onion

  • STEP 5

    In a large fry pan over medium heat add 2 tbsp olive oil and cook the brown onion until soft, add Protein Plate Plant Based Beef mince and fry for 3-5 mins until brown.

  • STEP 6
    Add 2 tbsp tomato puree to mince and let it simmer for 1 minute.

  • STEP 7
    Cut the potato in half and scoop mince onto the top.

  • STEP 8
    Sprinkle plant-based cheese and plant based sour cream on top of mince. Garnish with thinly sliced spring onion.
