Ingredients
250g Protein Plate Plant Based Beef Mince (available in the chilled plant-based section at Woolworths)
1 Green chili thinly sliced
1 red onion
2 Bay leaves
200g Coleslaw packet
80g (1⁄3 cup) madras curry paste
2 rotis
2 tbsp oil

Method
STEP 1
In a large fry pan over medium heat add 2 tbsp olive oil and cook the Protein Plate Plant Based Beef mince for 3-5 mins until brown.
STEP 2
Add ⅓ cup of curry paste to mince and let it simmer for 1 minute. Transfer to a bowl
STEP 3
Add coleslaw, onion and green chili to empty pan and stir fry for 3 minutes. Add mince back to pan and stir through
STEP 4
Slice 1 rotti into strips and combine with curry, allow it to simmer until soft.
