Ingredients

  • 250g Protein Plate Plant Based Beef Mince (available in the chilled plant-based section at Woolworths)

  • 1 Green chili thinly sliced

  • 1 red onion

  • 2 Bay leaves

  • 200g Coleslaw packet

  • 80g (1⁄3 cup) madras curry paste

  • 2 rotis

  • 2 tbsp oil

 Method

  • STEP 1

    In a large fry pan over medium heat add 2 tbsp olive oil and cook the Protein Plate Plant Based Beef mince for 3-5 mins until brown.

  • STEP 2

    Add ⅓ cup of curry paste to mince and let it simmer for 1 minute. Transfer to a bowl

  • STEP 3

    Add coleslaw, onion and green chili to empty pan and stir fry for 3 minutes. Add mince back to pan and stir through

  • STEP 4

    Slice 1 rotti into strips and combine with curry, allow it to simmer until soft.
