Ingredients

  • 250g Protein Plate Plant Based Chicken Strips (available in the chilled plant-based section at Woolworths)

  • 10g Basil

  • 10g Coriander

  • 10g Mint

  • 1 Cucumber

  • 1 Lime

  • 1 red chilli red thinly sliced

  • 50g (6) cherry tomatoes

  • 1 Red onion

  • 100g Lettuce

  • 2 tbsp Soy sauce

  • 2 tbsp Peanut oil

Serves: 2

 Method

  • STEP 1

    In a large fry pan over medium heat add 2 tbsp olive oil and cook the Protein Plate Plant Based Chicken Strips for 3-5 mins until golden.

  • STEP 2

    Add soy sauce, peanut oil and sliced chili to chicken and toss.

  • STEP 3

    Thinly slice the red onion, chop cherry tomatoes in half, chop cucumber in half moons.

  • STEP 4

    In a bowl, toss lettuce, red onion, cucumber, tomatoes, cucumber, basil, and coriander.

  • STEP 5

    Add chicken to salad and garnish with mint. Cut lime into wedges to dress.
