Ingredients
250g Protein Plate Plant Based Chicken Strips (available in the chilled plant-based section at Woolworths)
10g Basil
10g Coriander
10g Mint
1 Cucumber
1 Lime
1 red chilli red thinly sliced
50g (6) cherry tomatoes
1 Red onion
100g Lettuce
2 tbsp Soy sauce
2 tbsp Peanut oil
Serves: 2
Method
STEP 1
In a large fry pan over medium heat add 2 tbsp olive oil and cook the Protein Plate Plant Based Chicken Strips for 3-5 mins until golden.
STEP 2
Add soy sauce, peanut oil and sliced chili to chicken and toss.
STEP 3
Thinly slice the red onion, chop cherry tomatoes in half, chop cucumber in half moons.
STEP 4
In a bowl, toss lettuce, red onion, cucumber, tomatoes, cucumber, basil, and coriander.
STEP 5
Add chicken to salad and garnish with mint. Cut lime into wedges to dress.
